Steamed Red Snapper fish




Ingredients
  • 780g Snapper fish
  • 2 tsp salt - To rub on the fish, 1 tsp at each side.
  • 5  slices of ginger
  • 5 Dry mushrooms ( soak till soft and slice into thin slices)
For the sauce
  • 2 tbsp. Premium Soy Sauce
  • 2 tbsp Shao Xing Wine
  • 1 tsp crushed Rock Sugar (or just ordinary fine sugar)
  • a dash of pepper
  • a tsp of sesame oil
For garnishing
  • 1 sprig spring Onion, cut thinly and soak in ice water
  • 3 slices of ginger, Shredded and fry till crispy with sesame oil
  • 3 cloves of garlic, chopped into small pieces and fry till crispy with  sesame oil
  • some coriander
  • some julienned chillies (Optional)
Method
  • Clean fish, pat dry. Rub 1 tsp salt at each side of the fish. Rub some into the stomach too. And then, put 5 pieces of ginger into the stomach.
  • On a steaming dish,  place the fish on top.
  • Arrange the mushroom slices nicely on top of the fish
  • Use a small sauce bowl, mix all the sauce ingredient together
  • Bring water in the steamer to a boil. Place the whole bowl of sauce beside the fish, steam fish over high heat for 15 minutes.
  • While the fish is steaming, prepare your crispy ginger and garlic by frying with sesame oil till brown and crispy. Take note not to burn them or else it will turn bitter.. I usually fry the garlic first then use the remaining oil to fry the ginger .You can add more oil if you want.
  • Remove fish from the steamer, pour away the steaming liquid.
  • Pour the sauce on the fish, and place the crispy ginger and garlic over the fish.
  • Lastly then pour the sesame oil over.
  • Garnish, and serve!




 Separate steaming method - the fish and the sauce are separated, but steam together.

Pan fried cod fish top with crispy garlic

 
My family loves fishes. Tonight I have the urge to cook this cod fish fillets that I bought from Song fish. This fish simply melt in your mouth.  The link is below :
 I love to shop online and the best part is that they will deliver straight to your doorstep. This dish is best eaten warm and with lots of rice. That is what happen to my kids. This round I ordered cod fish fillets instead of the cubes because the meat stay on firmer when I pan fried them. In the package, there are a total of 4 big pieces at $47 for 1 kg. I am so happy with this purchase as these are enough to last me at least 3 to 4 meals for a family of 5.
 
 
Cod fish fillets
 
Big garlics
 

 
Ingredients :
 
2 pieces of cod fish fillets ( about 500g )
4 Tablespoon of good quality oil ( I like to use rice Bran oil for frying as the food stay crispy )
6 to 7  cloves of large fresh garlic ( Can reduce if your kids do not take garlic)
2 Tablespoon of premium grade soya sauce ( I use Kikkoman )
1 Stalk of spring onions ( shredded to thin pieces )
 
 
Methods:
~ Thaw the fish fillet till soft and pat dry the fish fillet with paper towels
~ Chopped up the garlic into tiny pieces
~ Heat up the wok first and add 2 tablespoon of oil
~ Place the garlic bits and keep stirring around to ensure even browning. Pan fried till golden brown and crispy. This step need patience and  you must control the fire to low or medium flame. The garlic will turn black very fast if you do not watch carefully or your fire is too high.
~ Scoop up the garlic and place in a bowl
~ With the remaining garlic oil in the wok, you can top up the balance 2 tablespoon of fresh oil .
~ Slowly place the fish fillet with skin face down into the heated oil.
~ Cover the wok to prevent oil from splashing. About 5 to 10 min, you can lift the cover and check whether the skin is crispy. If not, continue watching the frying progress till you get your desired browning of the skin.
~ Then slowly turn over and pan fried the meat for about 2-3  mins.
~ Slowly place on the serving plate.
~ Drizzle the soya sauce onto the fish fillets.
~ Deco with your crispy garlic and spring onions.
~ Serve warm with your rice.

Pan fried Batang with ginger sauce


Ingredients:

4 pieces of Batang fillets
Some cherry tomatoes
1 Stalk of spring onions
1 small ginger ( mash)
Soba or teriyaki sauce
1 Chilli
Self raising flour
5 spice powder
Sea salt


Methods
~ Wash dry the fish fillets
~ Pat dry with towel
~ Put some 5 spice powder, sea salt to marinate
~ Finally coat with some self raising flour
~ Heat up the wok
~ Pan fried both side of the fish till crispy

Sauce:
~ Mash up some ginger using a grinder
~ Cut up chilli
~ Cut up spring onions
~ Mix all together with soba or teriyaki sauce

Baked Teriyaki Salmon




Ingredients:

1 piece of salmon
1 small Japanese cucumber
2 small cherry tomatoes
A dash of salt
Teriyaki sauce


Methods:

1) Wash salmon and remove any bones
2) Place on a baking tray and sprinkle a dash of salt
3) Place in oven and bake at 200 degrees for 15 to 20 mins
4) Serve with teriyaki sauce on top
